This was my favorite meal as a kid…Would firm tofu be a good substitute?
mm i love mushrooms…and breaded mushrooms are usually deepfried (ew) never thought of baking them before!

I’ve had some good stuffed mushrooms. Portabello is a decent meat analog, and I bet it would make a good stuffed mushroom. That being said, it might be interesting to try to shake’n'bake it.
Like the above fellow noted: portobello mushrooms would be a good totally-DIY start… cut it into fairly thick strips, and then shake & bake it.
I don’t think firm tofu would be a good substitute simply because even the firmest of tofu is still 1/10th as firm as meat. Maybe some seitan or something like that, since it’s more fibrous, or one of the various frozen meat substitutes you can get at a store.
If you live in a city that has a good Asian grocer, there is a company (called Vegefarm if I recall correctly) that actually makes *fake meat drumsticks.* Seriously: it’s a piece of soy-based fake chicken with a little wood drumstick! I personally find it to be a bit much because it’s mimicking the chicken leg a bit too much, but I’ve gotten them and batter fried them for friends who were pansies about fake meat at parties.
