You can have rice,beans,lentils,tofu…And go from there.
You can make pita bread and hummus,pizza,pasta, rice and beans, mock meats which can be found in just about any supermarket.You can make vegetarian chili and so much more.
Go to health food stores they have loads of vegan options.I live in a town with limited options too and we have about three health food stores all with great stuff.Also, regular supermarkets carry things that are vegan as well.

The ever-increasing number of people (especially children) allergic to peanuts is also bringing about an almost paranoid over-reaction by some authorities. I’ve just heard about some schools in New Zealand banning all of their students from bringing peanut butter sandwiches to school, just in case an allergic child comes into contact with the sandwich. Now that is ridiculous!
In Australia, just over a decade ago, there was a major peanut butter scare. The peanut butter from one factory was contaminated with r.s. (rat sh*t) – a lot of people became ill after eating it. What made it worse was that the factory made just about all the peanut butter in the country except for one brand. They made not just Kraft, but also all of the generic supermarket brands of peanut butter. One of the biggest ever product recalls in Australian retail history ensued. A lot of people stopped eating peanut butter for a long time as a result of the scare. I just made sure that I always bought Sanitarium, the only safe brand, and I didn’t miss out on eating peanut butter. The recent salmonella scare in the US sounds similar.
I like peanut butter, but I don’t eat it every day. It would get a tad boring. It’s relatively safe though. Just keep your eyes and ears open for any product recalls involving peanut butter.
